Ingredients:
2 tablespoons sunflower seeds
2 fresh medium sized zucchini
100g feta cheese
about 30 pitted black olives
about 20 fresh mint leaves
Olive oil, salt pepper
Preparation;
Roast the peeled sunflower seeds in a pan and set aside.
Wash and dry the zucchini.
Cut into thin slices. Put the zucchini slices in a bowl with a little olive oil, salt and pepper and mix gently so that the slices are moistened with olive oil.
Sauté the lightly oiled zucchini slices in a non-stick pan from each side. Let cool down.
Slice the olives and cut the cheese into small pieces. Cut the mint leaves and mix carefully with the cooled zucchini slices.
Season with salt and pepper, if desired, olive oil can also be added.
Finally, sprinkle with sunflower seeds.
The salad tastes best if you let it soak for at least an hour.
