The sweet potato is a tuber that, despite its resemblance to the potato, has no botanical relationship with it.
They are grown all year. We can mainly find three varieties of pulp, white, yellow and salmon, and its flavor is sweet or very sweet depending on the variety and area of cultivation.
It is rich in starch, carbohydrates, sugar and carotene. It also contains vitamins, like C, and various minerals, such as potassium.
It is a very versatile food, since it can be consumed boiled, fried, as puree, baked, as an accompaniment to meat and fish and as a main ingredient in sweets and cakes.
Although they have a robust appearance, their skin is fine and their pulp delicate, so they have to be handled with care and consumed quickly.
