Ingredients:
1 kg pumpkin
2 onions
3 apples
500 ml vegetable broth
100ml almond milk
basil
thyme
salt, pepper
Preparation:
Peel the pumpkin and cut the pulp into pieces. The same with the apple.
Then cut the onion into pieces, too.
Put everything together and add the broth and spices. Bring it to boil and simmer over low heat (covered) for 45 minutes.
When the cooking is finished everything is blended with the hand blender. At the end we add the almond milk and put the soup on the fire again until it starts to boil. Then we take it off the stove again and the soup is now ready to serve.
It can be decorated with basil or parsley.
